I've moved to Sydney from Brisbane. Up there, we have the river loop, a super convenient place alot or roadies can get there K's in on the weekend / mornings.
Is there something like that in Sydney, a popular Sunday morning ride? I'm living in Camperdown, so any loop around or near there would be great!

Depends on the type of riding you want.
DHBC has Sat Slowies that loop around Centennial Park. Leichhardt BUG also has regular weekend rides starting in Annandale.
Bianchi, Ridley, Montague, GT, Garmin and All things Apple
There isn't anything like the River Loop (I spent a couple of years cafe racing on it) down here but the most common ride from the Inner West is probably the Waterfall ride. DHBC does the Waterfall ride on a Sunday morning with 4 groups leaving from Mick Mazza's cycle shop on Marrickville Rd (~80 km's).
The Bicycle Garage (cnr Lilyfied and Balmain Rd) does various Sunday rides. Check at the shop for start times and destinations. These rides tend to be longer ones.
A bit further out (Burwood) is an LACC ride that leaves from CycleWorld on Burwood Rd at 6am on Sundays for various destinations (Waterfall, Kurnell/Cronulla, Gorges, etc). There are even a few ex-Brisbanites (from HPRW) in this bunch.
There is also Sydney Olympic Park which has a few different loops and is a bit quieter.
The big thing you'll have to get used to is the increased traffic and riding on major roads. The difference between Brisbane and Sydney in this respect is significant.

Are there Strava segments for the rides mentioned here, or other popular rides?
I see segments like

These numbers seem very low, especially considering the population of Sydney vs Brisbane when we have (for example) Bicentennial Bikeway segments in Brisbane - http://www.strava.com/segments/3336004 - with 10,273 people.

Strava reflects the number of users which can be quite different from the number of cyclists. Just to use the three places you mention, the average number of cyclists over a 7 day period in 2010 & 2013 are as follows
Quite a few good rides out of North Sydney, depending on how far & how hilly you want to go. The Naremburn to North Ryde path is an easy 7.5 km with a connection to Rhodes, SOP & the Parramatta River cycleway. Head south across the Harbour Bridge to the CBD
If hills are your thing, head north via the Spit Bridge.
