The OP clearly states he comes from a MTB back ground eg lots of low gears and you are suggesting he should go for pro peleton gearing right from the word go!
Seems a bit extreme to me
Just saying that the cassette shouldn't ever be an issue when buying a new bike. Just tell the LBS to replace the cassette to your preference (if you have one).
