In my experience, I have never seen anyone wheeling one in a shopping centre, although I don't see the problem as one could easily have rolled one out from K Mart. Otherwise, I've seen one guy rolling his sharp looking fixie in Sydney's Apple Store. The staffs there didn't even blink an eye.

Not sure why I only feel comfortable doing this in a bike shop though.
Shopping centres get narky when you take your bike inside. If they let you do it, they have trouble justifying the exclusion of youths on their BMX bikes. They'll stop you on the grounds of "Safety", since your bike will be a hazard in an evacuation (apparently?).

Otherwise I ride my (lets say crappy) city bike if I want to pop into a shop - so have no problem locking it up outside.
I guess it would depend on the shop and the bike - on the otherhand the attitude you have would count - by showing that you are meant to be there and it is nothing unusual I think you can get away with a lot.
scuse me, I am just going to rest my ride up against the (most expensive) wines you have in the shop...

It would've increased Apple's hipness factor or they've hired an actor to walk in there with a fixed gear... Might pay to check the shopping centre you wish to enter to check that.
As for individual shops it probably depends on the shop. The only shop I take my bike into is the loacal LBS even when only asking a question, they don't mind.

Oh no, they are learning from some of those Asian shopping complexes. Their rules are so pathetic, to the point of banning photo taking within and outside of the complex, even with camera phones.
