My Garmin Edge 500 is playing with me anymore and most likely needs to be replaced. Saying that I'm thinking of ordering a second base unit, so as to minimise downtime. Will any new base unit work with my original HRM, Cadence sensors?

Or I could convince myself to get a 510 maybe...

I would say yes they are all ant+
I had a 705, HR strap, 3 garmin cadence speed sensors, a motorola cadence speed sensor (half the cost of a garmin sensor) and a ant+ power meter
The 705 was playing up (corroded USB connector) so I bought a 500 , everything works, so I expect the same if I went 510
