Need an advice for cycling from Sydney to Adelaide

We are a couple from Croatia, Europe, 29 & 30 years old. We are traveling for 4 months now through east Europe, Turkey, Nepal, Thailand, Laos, Vietnam, now we are in Cambodia and after Indonesia we are flying to Sydney at the beginning of April. We are on budget and we like all kind of adventure sports so our plan is to buy bicycles in Sydney and cycle first to Melbourne and than by Great ocean road to Adelaide. During the trip we will try to camp and visit all rock climbing areas as much as we can .

We would be grateful for any advice about: accommodation (camping grounds, hostels), where we can buy and sell second hand bicycles, what is the best route etc.
