Sydney to Adelaide

We are a group of 4 Poms
We are planning to cycle tour Sydney to Adelaide early 2015 using a mixture of B&B and camping. We will have a back up van.
we would like to do this on sealed roads and plan to take about 16 days (we will use some transfers)
Is there any advise on what we MUST see (i know the ocean road) and MUST Avoid - are there routes that i could access?
Any help with route planning would be terrific

Way too ambitious. Australia is just a wee bit bigger than the UK (a problem many European visitors to Australia have). For a reasonable tour - as opposed to an endurance ride or time record run - 16 days would make for a good tour from Sydney to Melbourne via the coast and Snowy Mts.

Syd-Melb-Adel ~2000kms. Divide by 16 days. Average 125kms per day, every day. Maybe that's OK for you and your friends if you're riding light road bikes with full support carrying luggage, but it will be a traffic-fest on Highway 1.

B&B is not frequent in OZ. More frequent are Pubs .. most remote pubs do accommodation - fairly cheap.

You'll need to identify what

a) distances you are comfortable traveling in a day (assume flat, good surface, no wind, no luggage as that is in the backup vehicle).
b) things you'd like to see/experience.
c) how frequently you'd like to stop for a day off (see the town, do the washing, send some postcards, check the email, etc.)
