I can't suggest a good map because it's been a long time since I've had to buy one. However, go into your motoring group - RAA, RACV, etc. They are likely going to have the best range of maps for touring.

(be a good idea to put at least your state into your profile so we know where you're from)

As Richard said, motoring organisations are a good source. I frequently use TravelWiz at http://www.mynrma.com.au/cps/rde/xchg/mynrma/hs.xsl/guides_and_maps.htm, and the Travel Planner is a useful resource too (it pops up on websites all over the place).

Isn't there a book called Cycling Australia or something?

There are some excellent road map books, but way too heavy to carry on a bike.
If the R-1 rule is broken, what happens to N+1?

There's a good book by Paul Salter in the 'Epic Guide' series called 'Bike Australia - Cycling Australia from Pert to Sydney' which has all the gen on the ride including via Adelaide - via Mildura, West Wyalong and Bathurst. Try
http://www.epicguides.co.nz for more info.

Why not just use NRMA's road maps? Free with enough info.
Bianchi, Ridley, Montague, GT, Garmin and All things Apple :)

Steve Parrish Publishing put out a good series of maps, they even have campsites marked on them. Available at most good bookstores in Australia.
