Thinking of doing a last minute trip to Tasmania to cycle

I am really interested in doing a cycling trip in Tasmania during this Christmas break (late December to early January). However I have not done much research and because this is a last minute decision I have so many questions.

1) What are some of the best cycling day trips in Tasmania?
2) How many days would be ideal to see the highlights of the landscape of Tasmania? Would 7-9 days be enough?
3) How easy is it to hire a bicycle in Launceston/Hobart to do a couple of days of cycling? Any recommendations and what will the prices be like?

Thomas, this could be some good info to start with.....yes somewhere I'd like to explore as well.
