I'd highly recommend the GoPro. It's a no fuss, and no frills solution which is what you want when you're on the road.
There's a few pros and cons though:
PROs:
Full Water proof and quite rugged housing
Quick and easy to record - one button record setting available.
Light and small!!
Great viewing angle
When mounted well, image stability is superb.
It also comes with a helmet mount. (which I didn't test)
With good light the colour is quite vivid.
Makes you look like you're going really fast.
VERY HAPPY OVERALL.
CONs:
- Bike mount kit (which is an optional extra) isn't the great for large tubes. It didn't fit snugly on my front stem, needed to tighten it often, the plastic fatigued and weaked quite a bit, nearly lost it once!
- Mounting on the rear set post is easy, but vibration was an issue for me. I didn't engineer any great solution to it, because I hoped it would work well out of the box. I'm sure you could improve it with some thought.
- Audio quality isn't great because of the water proof housing, but there's a semi-open housing which does a better job.
- Battery seemed to be a slight problem but then again, I did use it on and off over 3 days without charging!!

- Hard to tell when it's recording as the beeps are quiet, and the light is on the front. (I had plenty of footage of me peeking over the top of it to check) haha
Editing was a breeze on a macbook with iMovie. I did a quick and dirty edit in a hotel room after we finished the ride.
I used a 16Gb card and that was fine. But 32Gb is also pretty cheap. You can choose different recording settings which use less storage.
