What frame rating is good for what conditions?

I've done google searches and found lots of technical descriptions but putting it in basics is almost no existent.
Can someone please explain in simple terms the difference and the advantage/disadvantage in 6061 and 7005 alloy frames?
I should know being a fitter and turner before I started working with PC's.
