New Shimano 105 - R7000 series

I believe the Di2 omission is based on buying demographic. The 105 user is possibly seen as more pragmatic and economically driven, and possibly less tolerant of the markup associated with electronicizing the 105 group, whereas the buyer seeking the latest and greatest is far more likely to spring the currency for DuraAce or Ultegra.

Believe it also allows Shimano to more fully differentiate between product levels, especially for things like OE fitment. An electronic 105 would possibly eat into Ultegra/DuraAce sales whilst yielding less profit (i.e. there is only so much Shimano could sell a 105 group for).
Alternatively there may be a perception of insufficient demand for a $2000 105 group, with DA at $3.2k, Ultegra at $2.6k. I s'pose if you're spending $2000-odd $s on a groupset, you'd spend $2600.

Only about $300 between 105 and Ultegra, less when the mechanisms would be identical, so yeah really no market for it when it would be a $1500 (on sale) groupset, just pay the extra.

Could probably achieve the same pricing now by using 105 crank, chain, cassette, brakes with Ultegra Di2 shifting.

It will happen one day when the electronics are much cheaper.

Yes; all of Shimano's road hydraulic levers & calipers will work with each other (and probably all MTB calipers too - definitely the two-piston models, fairly probably the four-pots too).

The only thing truly new and surprising is the compact lever option (ST-R7025); everything else is completely expected.
