My research skills have let me down. I can't find what the pitch on a Shimano freehub body bolt is.
Anyone know?

It's probably 1.5mm pitch, but without a thread file, you'll have to measure.
Get a GOOD steel rule, and measure the distance over 10 teeth, and you'll have your answer.
It may be 1.75mm as well, but you'll see it easily with a good ruler.
PS - pic of a thread file - the saw tooth bit on the end is what you measure it with, and the other bit is to repair the threads.

OK, so thats one part, they seem fairly coarse. What about diameter? Crank bolts are M12, but I don't have one to test with.

You measure the outside diameter of the bolt .. it is usually a little undersized for clearance. And usually runs in 1 mm increments, unusually to find anything other than 1 mm increments. With nuts you can measure the inside diameter .. and then add twice the pitch .. so a 12 mm inside diameter nut with a 1 mm pitch would be a thread of 14 mm with a pitch of 1 mm . Nuts are much harder as it is very difficult to measure the pitch of the thread. I usually resort to using a screw to determine the pitch - even if it is the wrong (smaller) diameter.

To rephrase MichaelB, I think you'll be pushing an elephant upstairs trying to find the right tap, because 1mm is pretty fine for a 14mm diameter. Apparently even 10x1 axle thread is unusual.

Interestingly, 14x1 seems to be a common thread for muzzle brakes and silencers for rifles...correlation?!
