It doesn't really matter, go at whatever pace you can and enjoy the ride. There isn't really a cutoff time as you will find they will just pack up and go (just make sure you know the route in case marshals etc knock off). Some of the members of the group I am with found this out last year and did the ride in a bout 7-7.5 hrs or so. Having fun is the main thing and don't be put off trying to make a time.

I haven't done the event. But I would suspect that you'd want to be able to average at least 30 in a small group on flatish terrain over 100k type distances. The 160 km route is ideal for a plodder to do in 8-9 hours including rest stops
But you will be dismayed to see the speed demons race away from the start.
If you spend too long out on the road you might find the afternoon heat is cruel and motorists get worse also
And everything will be over, packed up and gone home at the finish.

Just had a text from my ride partner - i broke him on a 70km ride on sunday (to be fair he wasn't feeling 100%)- and has had to pull out
So i'll be looking for someone to wheelsuck or someone to ride with. I'm hoping for a time of 4 hrs.

If you go up Dunns Rd (off the main Rd at first pub) there is a winery that is very picturesque. (Normanby Wines)
Good place to relax if you are ahead of schedule and need a glass of red wine.
Donot go up to the winery if it is raining caus the road is unsealed (but only about 1-2 km)
Or if you have mudguards should be OK
