I have a very similar build with my Coppi and I de-stickered the wheels. Much better with a steel frame IMO. I'm thinking of coming to Raterday tomorrow so we can compare notes. The Campy-Click is the same as the Harley-Howl in my book. Look at me marketing.
If they did a semi-silent pawl, id jump on the Veloce.

You could open them up and squirt a bit of grease in there with a syringe I guess.
Might quiten the pawls down a bit.

retro steel with modern running gear is a sweet thing indeed. it's not hard to do, everything is essentially the same, except the gear shifting mechanism is at your fingertips instead of the down tube, and only requires adaptors to make it compatible .

Wheelset & pedals bought locally (second hard), bar tape, seat post etc all local too, used a saddle I had lying about.
I'd go as far as to say you couldn't buy something new (at this level spec) for under $1000 - which is what this build cost. Plus, its steel.
Give it a go - you'd be surprised how far your $$$ will go.
