Tips to avoid stripping bolts

So I just purchased an old roadie off ebay. Picking it up thursday, Its going to be my first ever 'project'

Going to spray it matte black, But I have to strip it down.

I have had a fair share of stripped bolts. But easy repairs (disc rotor bolts)
Now, I believe that some of the bolts are going to be very stiff as it hasn't been touched in years,

Do you have any tips to avoid stripping things?
I have bought a butane torch off DealExtreme so I could probably use that if it arrives anytime soon.

What about using Inox or WD-40 or something?

Go the chemical option first. Spray, leave it to marinade for an hour or so, spray again. Try the bolt. It sometimes helps to tighten the bolt a fraction before trying to loosen off.

Or give it a good crack with a heavy soft hammer first... preferably on to the socket instead of the bolt itself.
