I currently use Campy Zondas using 700x23c tyres.
I'm thinking of trying out some 700x25x tyres on these rims? Can I do this?

I have heard 25c give a more comfortable ride but I assume that is at the cost of some speed?

Ride is generally better as they can be run ata slightly lower pressure. Speed is not affected one jot.

On a poor surface the 25c's feel faster than a narrower tyre. On a really good service there maybe a tiny penality but someone would have to back it up with some roll-down tests, I doubt there is much in it. I'm confient enough that I've gone to 25mm tubulars on my race wheels (the roads here are quite rough, what people refer to as "chip seal" ). Re: 700 x 25c tyres25mm tyres are great. I had been running them since mid last year, and for the same PSI they ride a bit nicer than 23mm tyres. Having said that, there can be clearance issues. I ran Conti GP4000 in 25mm and they're known to be one of the larger profile 25mm options. I also run them on Velocity A23 rims that gives tham a slightly wider profile. While I loved them, I have just upgraded to a Felt F4. I just changed out the cassette before christmas and found that they've been rubbing on the chainstays, so I've gone back to 23mm tyres for just that little bit of extra clearance.
Also when browsing around for a new steed, I put my wheels into a Cervelo R3 and they won't go at all on their front fork. No doubt there'd be issues with other frames/forks as well. They definitely won't hold you back for speed either!
