something a bit like these. a lot of horse riders wear them. the ones i'm referring to don't actually look like that but are of a similar idea.

A guy I used to work with doing motorcycle courier work would stick his helmet in a chest freezer at lunchtime on 40 degree days in Perth. He reckoned it was great, probably not as effective with a bicycle helmet.

I made do with evaporative cooling, I installed a car windscreen washer unit so I could spray myself with water while riding, that could work on a bicycle.

On really hot days I carry an extra water bottle and just pour cold water over myself when I feel too hot. I partially freeze water bottles all year round, I like my water cold. I also remove the helmet for the last few KMs as I consider it a health and safety hazard in extremely hot weather, it makes my head too hot through lack of ventilation.
