Looking at getting a Defy 2 (2013) which comes with Giant SR-4, 700x23 tyres. I read various recommendations that changing the tyres is a good option. Can this bike fit 700x28 like the gator skin. First road bike for me..

Dunno if it would fit a 28mm (a few US-based bike forums suggest some 28s WILL fit), but have to ask why? A 25mm would be more than sufficient, unless you are using it on rough paths.

No reason as I dont have a feel for the sizes on a road bike only MTB, I was only thinking about stability as i get use to the road bike. I'm happy for recommendations.
But noting your response I might go with gatorhardshells in 700x25 size..

You don't even have it yet. Why not try riding it with the OEM tyres, and then decide if you want something wider when they are due for replacement.

Fair call also - you may be absolutely fine on the 23mm tyres.
