Installing New Groupset - Help Wanted

I'm hoping a Melbourne based amateur bike mechanic will coach me on installing a new 11 speed 105 groupset. I'm hopeless at bike mechanics but keen to learn. I haven't got the right tools but am willing to purchase.
I'm happy to buy beers or other lubricants or discuss a fair arrangement.
Before someone suggests YouTube, I'm so bad mechanically that I wouldn't trust myself to follow a video and not stuff up!
I've got the frame set and the parts are ready to go from an aborted Curve Grovel build. I am currently recovering from shoulder surgery so have about 8 weeks before I could ride the assembled bike.

Have you thought about getting a quote from a shop? I don't know what they'd charge but am thinking by the time you buy tools/beers etc...
Or maybe you're smarter than that and figuring you'll then be able to do more stuff yourself.

Two shops have quoted $320, being 4 hours at $80 per hour.
In contrast, I've always wanted to learn more and I could do with the tools.
I'm in Ashburton.

Not that hard at all mate need Allen keys and pliers/wire cutters (and a crank tool and bb tool if replacing those)

and cluster tool, chain whip, chain tool, knife and tape for bartape (if it doesn't rewrap properly)...
A workstand can help too. I agree it's nit necessarily hard but I'm always surprised at how many bits and pieces I've collected for only casual maintenance.
