The distance are vast and the biking rather (very) hard and not to be taken lightly in terms of the distance between towns for all parts east of Albany.
Suggest you contact and do some organised tours that are recommended by the visitors centres to really get the most out of your visit to each town.
Warmshowers may be helpful.
Have biked Esperance to Balladonia via Fisheries Road and found it both hard and very isolated and I am very comfortable in the remote parts of Aust so please be careful - this may give you some idea of what it is like away from the coast

I did a tour in Tasmania in January 2020 combined with Melbourne. Tasmania is rather cold in January. There’s a. Cold south wind. But I recommend it. Very beautiful places and not too hot. I combined with Melbourne and great ocean road and the otways. Which I had to stop because of extreme weather from 40’ to 14’ in one day and also the bushfires. But I highly recommend this combination. Transport with busses and trains is easy in case you need it. There’s also the northwest beech trail to discover. I’ll return to finish where I left off. Are you in Australia in the meantime? How is your trip? Borders closed?
